I have been trying to cook more, it is just so easy to go out for dinner when I get home late. We have a ton of tasty and affordable options by our house, but we get so sick of eating out. I came across this recipe on Sweet Tooth Sweet Life, one of my favorite blogs. It was a good recipe for chicken breast that came together in minutes. Again, I apologize for the lack of pictures.
Bruschetta Chicken Bake (adapted from Sweet Tooth Sweet Life)
-1 can of diced tomatoes
-1 package of chicken flavored stuffing mix
-1/2 cup of water
-2 tsp minced garlic
- 2 boneless chicken breasts, cubed
-fresh basil leaves, chopped
-mozzarella cheese
Preheat oven to 400 degrees. Mix tomatoes, stuffing, water, and garlic together and set aside. Place chicken in a 13×9 casserole dish and top with cheese and basil. Top with stuffing mixture. Bake until chicken is done, mine took about 40 minutes.
Enjoy! This is another one that was great as leftovers.
